“Irreverent” and “always unsatisfied”: this is how the team describes the leader of the Ocean. Yet, it is the dynamic of the group, and the energy that they bring together, which best defines Austrian-born, Hans Neuner. Each member of his team brings his own culture and references to the table: that is why, the kitchen of the Ocean is a sort of atelier of memory and invention. The team is the soul of the Ocean, its creative force. Few chefs like Hans know how to listen to that force: it’s like the distant sound of the ocean in a shell.
Hans Neuner was born in the Austrian part of Tyrol and from very young inherited the flair for professional cuisine: the son and grandson of cooks, he began cooking at the tender age of 14. One of the highlights of his career was during the time he worked at the restaurant of the Adlon Hotel, in Berlin, as a disciple of Chef Karlheinz Hauser. During his nine years at the Adlon, he revealed his talent for cooking. Later, he worked at two Michelin star restaurant, Tristan, in Mallorca (Spain), before returning to Germany as Chef-de-cuisine at Seven Seas restaurant in Hamburg, with one Michelin Star.
In 2007 he is invited to head the kitchen at Ocean at VILA VITA Parc Resort & Spa, in the Algarve. From the beginning, he reaffirms his vision to earn a Michelin star, exploring his own methods and techniques, recruiting and leading his own team.
Only two years later, this dream becomes real and Ocean earns its first star. In November 2011, the Michelin Guide awards him the second star. A surprise, but only for those who don’t follow closely his work, his persistence and determination. Hans Neuner is the second youngest chef to hold two stars in the red guide in Portugal. This distinction is the recognition of the team’s consistency and hard work: it’s also the recognition of the quality and maturity of haute cuisine accomplished today in Portugal.
